Apple Carrot Beet Pie

  • 1 cup almonds
  • 1 cup dates, pitted
  • 2 tablespoon chia seed ground
  • ⅓ cup oatmeal, ground.
  • ¼ cup water
  • ½ cup Muscat or other sweet dessert wine
  • 1 cup unsulfured dried apples, chopped
  • 3 apples, grated
  • ⅓ cup raisins
  • ¼ cup walnuts
  • 1½ cups shredded carrots and beets
  • 1/ 2 cup shredded coconut
  1. Blend or food process the almonds and oatmeal. Mash dates with water and ground chia seeds to make a date chia paste and kneed this paste into the oat/almond flour. Then press into glass pie plate.
  2. Mix and marinate the chopped dried apples with the wine overnight in fridge. Then blend together the apples, walnuts, raisins, and dried apple mixture and when smooth, mix in a bowl with the shredded carrots, beets and coconut and spread over pie crust pressing it down into the pie. Let sit in refrigerator with glass plate on top

Date Candy


  • 12 Medjool dates
  • Almond or peanut butter, tsp per date
  • 1/4 cup coconut oil melted
  • 1/4 cup raw cacao
  • 2 Tbsp agave or yacon syrup


  1. Carefully slice down the center of the dates to remove the pits and open a cavity to hold the almond butter.
  2. Fill the center of the date with your nut butter. Place the prepared dates in the refrigerator to cool for approximately 30 minutes.
  3. Melt the coconut oil over low heat.
  4. Pour oil into a bowl and mix in the cacao and syrup. Allow to cool slightly, do not refrigerate.
  5. Coat them in the chocolate mixture. Place on parchment paper and return to fridge to set.
