Rejuvelac is a rich, nutrient-dense fermented “living water” made from sprouted grains or seeds. It is one of nature’s finest and most powerful probiotics, and many are surprised that it costs only a few cents to prepare.
Predominately made from wheat berries, rejuvelac can also be made from sprouted rice, barley or buckwheat. Mixing these grains is okay too, and you’ll find each one has a unique flavor. Remember, the seeds or grains must be “raw” or they will not sprout.
While water kefir can be made more carbonated, like a soda, rejuvelac is much like a good lemonade.
